Easy, healthy single-serve apple crisp

I have tried hard to clean up my diet in the past month, but one of my downfalls is that I am always so hungry by late afternoon. My other problem is that I am usually cold and want to eat and drink something hot.

Last week, I was going to eat an apple when I had the idea to try to make a very healthy apple crisp, just for me. I wasn’t sure how it was going to work out, but let me tell you: Yummy!

Single-Serving Apple Crisp

  • 1 Apple cut into bite-size pieces (I leave the skin on)
  • ¼ cup of oatmeal (not quick-cook)
  • ½ tsp cinnamon
  • 1/8 tsp salt
  • ½ tsp olive oil
  • 1 T. maple syrup
  • 4 walnuts (chopped)

Preheat the oven to 350º. Cut the apple and put it in an oven-safe bowl. Mix the remaining ingredients in a bowl and sprinkle over the apple. Bake it for 30 minutes.
