Freezer Breakfast Burritos
We love these breakfast burritos! They are so helpful to have in the freezer for quick breakfasts. They also give my husband something quick to take along for lunch if we don’t have any leftovers.
Breakfast burritos are super diverse because you can throw in pretty much whatever you like or happen to have available. I have made them with diced ham, bacon, or my favorite, spicy sausages. You can also use whatever veggies or cheese you prefer.
Freezer Breakfast Burritos
- 18 eggs
- Vegetables of your choice (I used 1 onion and 1 pepper)
- 1 lb of spicy ground sausage
- 1/2 lb of cheese
- 16 tortillas
Cook meat and set aside. Saute vegetables until tender; add in eggs and scramble. After the eggs are cooked, mix them with the cooked meat. In a tortilla, add a slice of cheese and a spoonful of egg mixture. Wrap in foil or Press ‘N’ Seal®. Freeze in a gallon freezer bag.
To reheat, remove wrapping and microwave for 2 minutes and 30 seconds.
